I wanted to try to mix up my usual granola recipe a little bit, so I adapted a "toasted muesli" recipe of Jamie Olivers.
-4 Tbsp. sliced almonds
-2 Tbsp. coconut oil
-1/4 cup dates rolled in oats
-cinnamon to taste
-1/2 cup water
-4 Tbsp. sweetener of choice (I used agave)
-4 cups rolled oats
-4 Tbsp chia seeds
-1/3 cup steel cut oats
Step 1: Preheat oven to 325
Step 2: Mix 3 cups rolled oats, 1/4 cup chia seeds, 1/4 cup sliced almonds
Step 3: Add 1/2 cup sweetener with 1/2 cup boiled water until dissolved
Step 4: Combine wet ingredients and oats mix. Bake on a parchment paper lined baking sheet for 15 minutes
Step 5: Put oat mix back in mixing bowl, add 1/4 cup chia seeds, 1/3 cup steel coat oats, 1/4 cup dates rolled in oats, 1/4 cup coconut oil, and cinnamon to taste. Return to sheet and place in oven for 20-25 more minutes.
Step 6: Let Muesli cool and store in air tight container.
Best served with yogurt/milk and fresh fruit!
